Bond trader-turned-pitmaster Pat Martin spent his college years studying the dying art of whole hog barbecue from masters in West Tennessee, and he serves it in a sleeves-up, guard-down style. We love the smoked wings with Alabama white sauce, and the Redneck Taco, a pile of pulled pork, sauce and slaw atop a moist hoecake.

At Jimmy Carls, a somewhat new barbecue spot inside the Station Inn bluegrass club, the smoker is parked just outside the side door, filling The Gulch with come-hither wisps of hickory smoke. Once diners are lured inside, its obvious the nose knows: The pulled pork, and especially the ribs, taste like top-drawer product.

You can find ribs and the usual barbecue sides here, but the specialty of the place is pulled pork sandwiched between two skillet corncakes. The tender meat stands on its own, ready for you to season it at will with sweet, mild or hot sauce.
