Since Watermark opened in the Gulch in 2005, the restaurant has been synonymous with three things: Very fresh seafood, top-drawer cocktails and fine seasonal cooking. Right now, chef Sean Norton has several autumn delights on the menu; try the roasted pumpkin soup with crispy ham, crème fraîche and sage oil to start, and then maybe the grilled beef filet with spicy chow-chow and smoked sweet potatoes.
