Merchants: A tale of 2 menus

In recent years, Merchants Restaurant's fine dining reputation had slipped, but the entrepreneurial Goldberg brothers, Max and Ben (of Strategic Hospitality, whose ventures include Paradise Park and The Patterson House), have introduced a new chapter to Merchants' story.
Since acquiring the business in May, the Goldbergs have revamped the building. They've infused the bar with Patterson House-style savvy. They hired Chef Clayton Rollison, whose résumé includes Capitol Grille and Gramercy Tavern in New York, to create contemporary menus with Southern roots. It's a vision that melds the Merchants of one century with this one: an upscale restaurant and bar to intrigue guests.
